Business food safety management
Food safety legislation requires all food businesses, including caterers, to develop and apply a Food Safety Management System (FSMS) to their business. This controls food safety hazards to ensure the food is safe. This is based on the principles of Hazard Analysis and Critical Control Point (HACCP).
A Food Safety Management System (FSMS) based on HACCP principles builds on the everyday awareness of the business owner. This helps to generate practices that encourages safe food production and gives peace of mind to the business owners.
CookSafe
CookSafe is an open-source Food Safety Management System (FSMS) that has been developed by Food Standards Scotland. It is a guidance manual which if followed, will enable you to control food safety and build upon your existing good practice within your catering business.
CookSafe Records Booklet
To assist with FSMS record keeping, we have a CookSafe Records Booklet that contains the core requirements for routine checks in a single package.
To avoid the inconvenience of single sheets, these have been combined in an easy-to-use, durable A4 spiral bound booklet with wipe clean covers which consists of one-week-to-a-page records, containing:
